Protease refer to a group of enzymes whose function it is to break down proteins and are also referred to as proteolytic enzymes or proteinases. The proteins are broken down to their basic building blocks-amino acids. In the biotechnology industry, it is used mixed with a detergent, which is then used a stain remover. It is also very important in tenderizing meats, as a contact lens cleanser, leather bating and animal hide dehairing.
